The Canning Pantry

What's on the counter?

The Canning Pantry turns a pile of produce into a plan: how many jars your family needs this year, how many this batch will make, the tested time and pressure for your kitchen, and how many jars are still to go. It is one product in two parts, a Google Sheet that plans and counts and a 374-page book with all 246 tested recipes.

What it works out for you

Tell the Sheet your elevation and your canner once. Then pick the food on your counter and it gives you three numbers: how many jars, how many minutes, and how much pressure. The Book has the same recipe, with the whole table, on its own page.

7quarts
25minutes
15lb pressure
14 pounds of green beans in quart jars, at 2,100 feet on a weighted-gauge canner. The yield (the USDA average of 2 pounds per quart), the time and the pressure all come from the USDA Complete Guide to Home Canning.
  • 246 tested recipes

Fruits, tomatoes, salsas, vegetables, meats, pickles, jams and jellies, from the USDA Complete Guide to Home Canning (2015) and the National Center for Home Food Preservation. The steps are written in plain language, every rewritten recipe was checked against its source, and each one cites the page it came from.

  • Your time and your pressure

Boiling water, dial gauge or weighted gauge, at your elevation. The Sheet reads the row from the published table, and the Book prints the whole table so you can check it.

  • Plan my year

Mark what your family eats and how much. The Sheet works out the jars of each food, the lids to buy and how many jars are still to go.

  • Your zone and frost dates

Type a ZIP code and the Sheet fills in your growing zone and average frost dates from the nearest weather station.

  • The pantry count

Log each batch when the jars come out of the canner. The Sheet keeps the count of what's on the shelf and what's been used.

  • Printables

Year plan, calendar, canning day checklist, batch log, pantry inventory, jar labels and a log for jars that didn't seal. Print them as often as you like.

The Canning Pantry app

The app puts the same 246 recipes on your phone, timed for your canner, with a Canning Day mode, timers and a pantry that counts itself. It isn't on sale yet. It opens after the rest of the website and the web app are finished, and people who own The Canning Pantry will get it at the $10 upgrade price. Twenty recipes are free in it now.

The Canning Pantry plans and calculates. Your tested recipe decides the safety.

Every recipe, processing time and pressure in the Sheet and the Book comes from the USDA Complete Guide to Home Canning (2015) or the National Center for Home Food Preservation, with the source cited right where you read it. Where the steps are written in plain language, every rewritten recipe was checked against its source with every figure unchanged. For your elevation and canner the Sheet finds the matching row of the published table. Nothing in it invents, adjusts, rounds or corrects a tested figure, and nothing in it tells you whether a jar of food is safe to eat.

If your canner's manual says something different, follow the manual and check the tested source. When in doubt, ask your county extension office.

Questions
